Ingredients:
· Brushfire Farms Prickly Pear BBQ Sauce
· Meat Church Fajita Seasoning
· Duck Fat Spray (Any spray oil for your grill works as well).
· 6 cross-cut Beef ribs, ideally ½ inch thick
· 1 dozen corn tortillas
· ½ Cup fresh Cilantro, fine chopped
· ½ Cup sliced Pickled Red Onions (diced White Onion can work as a substitute).
· Any pick of your favorite Salsa, Hot Sauce or Guacamole.
Process:
· Step 1: Light a medium size charcoal fire on your grill. Gas grills will get the job done as well, but trust me, these tacos are much better over charcoal!
· Step 2: Season Ribs with Meat Church Fajita Seasoning. Once coals are hot, spray grill with Duck Fat or Cooking Oil and place ribs directly over charcoal. Flip frequently to avoid burning.
· Step 3: After the ribs have cooked for a few minutes, brush both sides of the ribs with the Prickly Pear BBQ Sauce. Continue to flip a few more times, so the sauce can caramelize onto ribs and ideally have a little bit of char on them. Goal is to have them cooked medium, not well-done. Total cook time should be 5 – 10 minutes.
· Step 4: Remove ribs from grill and allow to rest. Place corn tortillas on grill and flip frequently to just let them get lightly toasted and not burned. Pull and set aside.
· Step 5: Slice ribs off the bones and chop into small chunks. Place on tortillas, garnish with pickled red onions and cilantro. Feel free to also top with your favorite salsa or guacamole and enjoy!
