Hill Country Heat Corn Bread Muffins

Ingredients:
- 1 Box Lambs Sweet Corn Bread Mix (or your favorite Corn Bread Mix)
- 1 Cup of Milk
- 1/3 Cup of Oil
- 1 Egg, slightly beaten
- 2 Tbsp. Brushfire Farms Peach Peach Pepper Jam
- 1 ½ Cups Tillamook Medium Sharp Cheddar Cheese (grated)
- 1 Large Pickled Jalapeño, sliced in circles
- Spray Pam (or something similar)
Process:
- Combine Corn Bread Mix, Milk, Oil, Egg in bowl and whisk together. Then add Jam and 1 Cup Cheddar Cheese and whisk together.
- In greased muffin pan, fill molds halfway with mixture, then top with a little more cheese and place a ring of pickled jalapeño on top.
- Bake at 400 degrees (roughly 20 minutes) or until golden brown. Remove from pan, serve with our Peach Pepper Jam and enjoy!
