Ingredients:
2 Salmon Fillets, roughly a ½ lb. each
¼ cup Brushfire Farms Original Glaze
¼ cup Extra Virgin Olive Oil
¼ cup fresh squeezed Lime juice
¼ cup Soy Sauce
Fiesta Spices Orange Pepper Rub
Fiesta Spices Dried Parsley Flakes
Process:
Step 1: In a medium sized mixing bowl, combine Glaze, Soy Sauce, Lime Juice and then whisk in EVVO.
Step 2: Place Salmon on a plate and cover both fillets in several Tbsp. of marinade and place in refrigerator for 1 hr.
Step 3: Remove from refrigerator and season with Orange Pepper Rub.
Step 4: Light charcoal fire (or gas) with fire on only one side of grill. Close lids, open vents and allow temperature to reach 400 °F. Place Salmon fillets on grill away from the fire, so they can cook indirect, meaning not over direct flames.
Step 5: Cook until internal temperature reaches 135 – 145 °F. Be sure to baste both fillets with remaining marinade a few minutes before they’re done. Remove from grill and garnish with parsley flakes. Serve over a bed of white rice and enjoy!
