INGREDIENTS:

WONTONS:

1 lb. Ground Venison

2 Tbsp. Brushfire Farms Prickly Pear BBQ Sauce

1 Tbsp. Meat Church Garlic Jalapeño Blanco Seasoning

4 oz. Cream Cheese

1 Tbsp. Green Onion, fine chopped

2 Garlic cloves, fine chopped

1 tsp. fresh Ginger, minced or paste

1 Tsp. Extra Virgin Olive Oil or Beef Tallow

Banyan Foods Wonton Wrappers (the square kind, roughly 4” x 4” diameter)

2 Quarts Vegetable Oil for frying

DIPPING SAUCE:

2 Tbsp. Brushfire Farms Original Pepper Jam

1 Tbsp. Soy Sauce

1 Tbsp. fresh lime Juice

(Whisk together and chill in refrigerator)

GARNISH:

Chopped Green Onions

Chopped Cilantro

Lime wedges

PROCESS:

Step 1:  In a Cast Iron Skillet on medium heat, sauté ground venison in oil or tallow for a few minutes and break it up so it isn’t in large chunks.  Then add green onion, garlic and ginger, mix together and cook for a few more minutes.  Add seasoning and BBQ Sauce last, mix together, allow some liquid to cook out.  Total cook time 10 minutes.  Remove from heat and allow to cool.

Step 2:  In a medium sized mixing bowl, combine venison mixture and cream cheese.  Mix together well until it is a paste-like texture.

Step 3:  On a flat surface, lay down wonton wrapper.  Have a small bowl or cup of water next to it.  Dip finger in water and run it along top side edges of wrapper; this will act like a glue to help wonton hold together.  Place one dollop (a little less than 1 oz. roughly 1 Tbsp. of filling in center of wrapper.  Note:  Do not overfill wrappers.  Grab corners on opposite ends of each other, bring together and press firm so they will hold.  Do the same for other two corners and close up edges so filling stays intact.  Repeat for the rest of the wontons.

Step 4:  Heat vegetable oil in pot or pan to 350° and fry wontons in batches of 6 for just a few minutes until golden brown.  Once golden brown, remove with strainer and let excess oil drip off, then cool them on a plate with a few paper towels on it to soak up any oil.

Step 5:  Once all wontons are cooked, plate and garnish with chopped green onion, cilantro and lime wedges.  Serve with the dipping sauce and enjoy!
