Ingredients:
Sourdough Bread (most breads will work, but Sourdough is great for this sandwich)
3 slices of thick-cut peppered bacon, sliced in half.
1 heaping Tbsp. of Brushfire Farms Prickly Pear Pepper Jam
1 heaping Tbsp. of Peanut Butter
1 Tbsp. of Mayonnaise (butter can be used as a substitute)
Process:
Step 1: In a hot cast iron skillet or pan, cook bacon until crispy. Remove from pan and place on a plate with paper towels to absorb the grease.
Step 2: Slice bread ¼” thick and spread Mayo or butter on one side of each slice. Flip slices over and spread Peanut Butter on one and Jam on the other. Place bacon on top, form sandwich and cook on medium high heat in a cast iron skillet or pan for roughly a few minutes on each side, or until golden brown and crispy.
Step 3: Cut in half and enjoy!
