INGREDIENTS:
- 15 cleaned dove breasts, with breast meat cut off the breast bone (30 filets, total)
- 15 strips of Bacon, cut in half (thick cut bacon works much better than thin)
- 5 fresh Jalapeños, cut in half, seeds & veins removed and each half cut into thirds (30 slices total).
- 14 Fl. Oz. (1 bottle) Brushfire Farms Prickly Pear BBQ Sauce
- 2 Tbsp. Meat Church Jalapeño Garlic Seasoning (or your favorite seasoning)
- 30 toothpicks
- 3 oz. Cream Cheese
PROCESS:
Step 1: Preheat grill or smoker to 350F° on only one side, so that the Lizzie’s can cook indirectly, meaning not over direct heat or flame. Tip: Soak your toothpicks in a cup of water while preparing Lizzie’s. This prevents them from burning but is not mandatory, FYI.
Step 2: Lay down half-bacon strip on cutting board with one end facing you and the other facing away. Place dove filet (1/2 breast) across end of bacon strip closest to you, then a small dollop of cream cheese (the size of a nickel) on top, followed by a slice of jalapeño laying across, so the jalapeño ends stick out on each side. With both hands, roll Lizzie away from you so everything stays compact and not too loose. Push a toothpick through it to hold it together and continue until all Lizzie’s are ready.
Step 3: Season all sides of Lizzie’s with seasoning. Tip: Place Lizzie’s on a wire rack to make it easier to put on the grill and remove once they’re done. Place Lizzie’s on grill or smoker away from direct heat, close lid with vents open and cook for 20 minutes at 350F°. Note: Do not flip or turn Lizzie's while cooking.
Step 4: Pour whole bottle of Prickly Pear BBQ Sauce into a shallow mug or bowl. After 20 minutes and once Lizzie’s have some golden-brown color to them, submerge each Lizzie into sauce, before placing back on the grill. Note: You can also just brush them with sauce if that’s easier.
Step 5: Once Lizzie’s are lightly coated with BBQ Sauce and out back on grill, close lid with vents open and continue to cook for another 15 minutes or until dove breasts reach an internal temperature of 150F°.
Step 6: Remove from grill, allow to cool for a few minutes and enjoy!
