Ingredients:
Two 8 oz. bass filets.
Brushfire Farms Original Glaze
Meat Church Holy Voodoo Seasoning (Cajun Seasoning can be used as a substitute)
Flour Tortillas
Cole Slaw (store-bought brands work great for this and are cheap and easy).
2 Limes
Pickled Red Onions
Cilantro
Extra Virgin Olive Oil
Avocado Oil
Humble House Guajillo & Red Jalapeño Salsa (or your favorite salsa)
Process:
Step 1: Cut filets into roughly 1-inch cubes and lightly coat with Extra Virgin Olive Oil and Original Glaze. Rub seasoning on all sides and coat well.
Step 2: Lightly coat a hot cast iron skillet with avocado oil. Cook fish for several minutes on each side. Drizzle roughly 1 Tbsp. of Original Glaze on the fish while they cook to help caramelize. Cook until golden brown on both sides and remove.
Step 3: Toast or warm tortillas. Place fish in tortilla, garnish with coleslaw, pickled red onions, cilantro, salsa, a squeeze of lime and enjoy!
